  25. 1 tsp cashewnuts (kaju)

  27. For Seasoning
  28. 10 tsp oil
  29. 4-5 tsp butter
  30. 1 tsp little mustard seeds
  31. 1 little urad dal
  32. Ingredient for veg bonda
  33. 1 cup besan or gram flour
  34. as needed salt
  35. 3 green chilies chopped
  36. as needed coriander leaves chopped
  37. 1 tsp Ginger-Garlic paste
  38. 1/2 tsp garam masala powder

  40. 2 cups mixed veggies julienned
  41. 1 medium carrot or ¾ cup julienned
  42. 1 cup cabbage shredded
  43. 1 medium onion thinly sliced
  44. 6 french beans
  45. For The Gravy For Vegbonda Manchurian
  46. 1 tbsp garlic finely chopped
  47. 2 tsp finely chopped green chillies
  48. 2 tsp finely chopped ginger
  49. 3 tbsp chopped spring onions whites
  50. 3 tbsp chopped capsicum
  51. 2 cups clear vegetable stock or
  52. 1/2 tbsp soy sauce
  53. 1/2 tbsp cornflour
  54. 2 tbsp oil
  55. to taste salt
  56. For The Gravy For Vegbonda Manchurian
  57. 1 tbsp garlic finely chopped
  58. 2 tsp finely chopped green chillies
  59. 2 tsp finely chopped ginger
  60. 3 tbsp chopped spring onions whites
  61. 3 tbsp chopped capsicum
  62. 2 cups clear vegetable stock or
  63. 1 1/2 tbsp soy sauce
  64. 1 1/2 tbsp cornflour
  65. 2 tbsp oil
  66. to taste salt

Instructions to make to make Schezwan upma with veg bonda Manchurian

  1. Soak 1/2 hour chillies in hot water. Add little water and grind it to a smooth paste. Heat sesame oil in a pan, add chopped garlic, ginger and saute for 1 minute. Mix in chopped onions and saute for for another 1-2 minutes until onions are translucent. Pour in szechuan paste..Add tomato ketchup,Add soy sauce Add salt. Pour in vinegar and bring it to a boil. Add sugar and mix until well blended. Adjust sweetness and salt. Sezchuan sauce is ready
  2. Heat the oil and butter in a pan. Add cashews first and fry till light brown. Then add the mustard seed and urad dal, let it splutter add curry leaves, chilies and onions. Fry well till the onions leave oil. Add precooked vegetables and fry again for 2 mts, then add tomatoes, powdered cloves and cinnamon with garam masala.
  3. At this stage,you have to add schezwan sauce. Boil water in a separate pan. Add the boiling water to this fried ingredients add salt, mix well for 1 min. Add rava slowly and stir well, with out forming lumps. Once it's done add coriander leaves and lime juice.
  4. Now schezwan upma is done.
  5. Preparation for bonda recipe:- Wash the veggies and cut to thin 2 inch long strips. Add them to a bowl along with ginger garlic, chilies, salt, green chilli, garam masala, mint or other herbs. Mix well & squeeze them gently to release moisture. Keep aside for 10 mins. Add the gram flour along with ajwain. Adjust salt if needed. Add few tbsps water if needed to make a dough.
  6. Heat oil in a deep pan. When the oil is hot, slide a small portion of the dough to check if the oil is hot enough. The bonda dough must rise without browning a lot. This is the right temperature. Then gently drop small portions of the dough after flattening a bit. Keep stirring and fry on a medium heat until lightly golden.
  7. Manchurian:- Combine the cornflour and 4 tbsps of water in a deep bowl, mix well and keep aside. Heat the oil in a deep non-stick pan on a high flame. Add the garlic, ginger and green chillies and sauté on a high flame for a few seconds. Add the spring onion whites and capsicum and sauté on a high flame for 1 minute. Add the soy sauce and red chilli sauce, mix well and sauté on a high flame for a few seconds.
  8. Add 2 1/2 cups of water, mix well and cook on a medium flame for 2 minutes. Add the cornflour-water mixture, mix well and cook for 3-4 minutes, while stirring occasionally. Add the salt and pepper, mix well and cook on a medium flame for 1 minute, while stirring occasionally. Keep aside. Just before serving, add the veg bonda to the hot gravy, mix gently and cook on a medium flame for 2 minutes.
