  11. 1 tbsp clarified butter (ghee)
  12. To taste Salt
  13. 1 tsp turmeric powder
  14. 1 tbsp red chilli powder
  15. 1/4 tbsp cumin and coriander powder
  16. 1/2 tsp kitchen king masala
  17. 1/4 tsp kasuri methi (optional)
  18. 2 tbsp crumble paneer (optional)
  19. as required Roti or paratha to serve

Steps to make to make Veg bhurji

  1. Crush onion and tomato into chopper or mixture. Heat on in a kadhai and add onion, cook till oil release and turns brown. Crush ginger and garlic and add to pan. Saute for a min.
  2. Now add tomato paste and salt, turn flame high and cook till water absorbs and oil release. Then add all dry spices and saute for a while. Then add water to adjust consistency. Let it simmer and wait till oil release. (I like vegetables flavor so I avoided to add kasuri methi. But it tastes good so u can add on this stage)
  3. In a chopper add all vegetables and chopped then into small pieces. Add that to pan and mix and saute for a min. Then add some water, cover and cook for 2min. Last add some paneer and mix well.
  4. Transfer into bowl and serve with roti or naan or paratha. Enjoy the simple veg dish.
