Steps to make to make Baked Vegetable Shepherd's Pie
- For the potatoes topping
- Peel potatoes & grate them. Add milk, butter, pepper & salt.
- Mix & mash the potatoes well. It should not be dry.Add more milk or butter if required. Keep in fridge to chill.
- For the vegetables
- Heat butter & olive oil in a flat saucepan.
- Add garlic & stir. Add onions & stir. Do not make it brown.
- Quickly add broccoli, capscicums, peas & mushrooms. Give then a good stir. Add carrots & french beans followed by tomatoes.
- Cook all the vegetables for 2 minutes on high flame.
- Sprinkle mixed herbs, chilli flakes, pepper & salt. Mix well.
- Now sprinkle flour & mix well to avoid any lumps. Add the vegetable stock.
- Finally by adding cream, the vegetables are ready for baking.
- For Baking
- Grease a baking bowl.
- Spread the ready vegetable mix in the bowl uniformly.
- Full the piping bag with the chilled potatoes mix.Attach the nozzle & slowly layer rounds on the ready vegetables till it is fully covered. The rounds should not be thin. If they are thin then give another layer on the previous one.
- Put the prepared dish in a pre-heated oven at 200°c & bake for 15 to 20 minutes or till the potatoes are slightly browned. Serve hot.
