Ingredients and spices that need to be Take to make Veg Thali:

  1. For Ghee Phulka:
  2. 250 gms wheat flour
  3. As needed water
  4. Half tsp salt
  5. As needed ghee
  6. 1 tsp oil
  7. For Vegetable Pulav:
  8. 1 cup Pulav Basmati Rice
  9. 2 cups water
  10. 1/2 cup green peas
  11. 1/2 cup diced potatoes
  12. 1/2 cup chopped cauliflower
  13. 1/2 cup chopped Carrots
  14. 1/2 cup french beans
  15. 1 onion sliced
  16. 1 green chilli sliced
  17. 1/2 tsp whole black pepper
  18. 1/2 tsp whole cloves
  19. 1/2 inch dalchini
  20. 2-3 green cardamom (small)
  21. 1 bay leaf
  22. 1 tsp shah jeera
  23. 1 badi elaichi
  24. 1 tbsp ghee
  25. 1 tsp garam masala powder
  26. For Matar paneer:
  27. 1 cup green peas (boiled)
  28. 1 cup cottage cheese (paneer)
  29. 3-4 onions roughly chopped
  30. 2 tomatoes roughly chopped
  31. 1/2 inch ginger roughly chopped
  32. 9-10 garlic cloves (whole)
  33. As needed oil
  34. 2 tsp kitchen king masala
  35. 1/2 tsp Kasuri Methi
  36. 1/2 tsp Kashmiri Lal Mirch Powder
  37. 1/2 tsp turmeric powder
  38. 1/2 tsp cumin seeds
  39. 1/2 tsp dhania jeera powder
  40. per taste salt As
  41. 1 tbsp chopped coriander leaves
  42. For Aloo Gobhi Matar Sabzi:
  43. 2-3 potatoes
  44. 1 cauliflower chopped
  45. 1 cup green peas
  46. 2 onions finely chopped
  47. 1 tbsp ginger garlic green chilli paste
  48. 1/2 tsp turmeric powder
  49. 1/2 tsp dhania jeera powder
  50. 1 tsp kitchen king masala
  51. As needed Mustard oil
  52. 1/2 tsp cumin seeds
  53. As per taste salt
  54. 1/2 tsp Kasuri Methi
  55. 1 tbsp chopped coriander leaves
  56. For Sewaiya kheer:
  57. 4 cups cow's milk
  58. 3/4th cup Roasted Vermicelli
  59. 1/4 cup sugar
  60. 7-8 chopped cashews
  61. 1 tbsp ghee
  62. 1 tbsp raisins
  63. 1/4 tsp cardamom powder

Instructions to make to make Veg Thali

  1. For Ghee Phulka:
  2. Take Wheat flour in a big bowl add salt and oil now start adding water and knead a soft dough. Rest the dough for 10-15 mins.
  3. After 15 mins knead again and pinch a lemon size portion from dough. Roll it flat in 3-4 inch diameter. Heat a tawa and roast the roti by flipping it on both sides and then directly on the gas flame. The roti must fluff. Apply ghee on the phulkas and they are ready to serve.
  4. For Vegetable Pulav
  5. Wash and soak Pulav Basmati Rice for 20 mins. Meanwhile chop all the veggies - potatoes, cauliflower, carrots, onions and French beans.
  6. Now heat ghee in a pressure cooker add bay leaf, cumin seeds, cloves, whole black pepper, dalchini, green cardamom and black cardamom. Saute for 2 mins and add sliced onions and green chillies. Saute onions well till they are pink.
  7. Now add all the chopped veggies and saute well. Add salt, garam masala powder and soaked basmati rice mix everything well.
  8. Now add 2 cups of water and close the lid. Take one whistle and switch off the flame.
  9. Vegetable pulav is ready to serve.
  10. Matar Paneer:
  11. Soak 18-20 cashews in a small katori filled with water
  12. Boil one cup of green peas and keep aside. Meanwhile heat oil in a kadhai and add roughly chopped- onions, garlic cloves, ginger and tomatoes. Cover and cook till tomatoes are soft and mushy.
  13. Cool down this mixture completely and grind it to make a fine paste.
  14. Heat oil in a kadai add cumin seeds, Kashmiri Lal Mirch Powder, turmeric powder, dhaniya jeera powder, now add grinder masala paste. Saute well till oil separates completely.
  15. Now make cashew paste and add it in kadahi. Mix well.
  16. Add kitchen king masala mix well. Now add boiled matar and paneer cubes. Cover and cook for 10 mins.
  17. Adjust water consistency as per taste. Now add chopped coriander leaves and Kasuri Methi.
  18. Switch off the flame. Matar paneer is ready to serve.
  19. For aloo gobhi matar
  20. Firstly, heat Mustard oil in a kadhai add cumin seeds, add ginger garlic green chilli paste and saute, add chopped onions and saute till it turns golden brown in colour.
  21. Now add turmeric powder, dhaniya jeera powder and kitchen king masala. Mix well
  22. Add all the chopped veggies - potatoes, cauliflower and green peas. Saute well cover and cook for 10 mins.
  23. After 10 mins remove the lid add salt. Again cover and cook for 10 mins. Switch off the flame after 10 mins add Kasuri Methi and chopped coriander leaves.
  24. Aloo gobhi matar sabzi is ready to serve.
  25. Kheer Sewaiya
  26. Firstly in a small tadka kalchi heat ghee and add all - kismis and cashews. Once kismis is fluffy switch off the flame and remove cashews and kismis from ghee. Keep aside for later use.
  27. Now use the same ghee heat it again in a pan and add vermicelli and roast for 2 mins.
  28. Now add 4 cups of hot milk. Lower the flame and let it cook till vermicelli is cooked. Vermicelli will start absorbing the milk and kheer will become thick.
  29. Now add sugar and let it dissolve. Cook for another 5 mins. Now add fried cashews and raisins. Also add Cardamom powder. Mix well and switch off the flame.
  30. Sewaiya kheer is ready to serve. It can be refrigerated and tastes yum when served cold.
  31. Veg Thali -
